Buttermilk Waffles
ingredients
- 4 cups self rising flour
- 2 tablespoons sugar
- 1/4 teaspoon baking soda
- 4 cups low fat buttermilk
- 1/2 cup vegetable oil
- 8 large egg whites
- cooking spray

1. Combine flour, sugar, and baking soda in a large bowl. Combine buttermilk and oil; stir well. Add buttermilk mixture to flour mixture, stirring just until moist.

2. Beat egg whites at highest speed of mixer until stiff peaks form. Stir one-fourth of egg whites into batter; fold remaining egg whites into batter.

3. Preheat waffle iron and coat with cooking spray. spoon about 1/4 cup batter per 4’ waffle onto hot waffle iron, spreading batter to edges. Cook until steaming stops; repeat procedure with remaining batter.
