Summer Pasta Salad
ingredients
- 1 box penne pasta (whole wheat or regular)
- Tomatoes (2 large or a few small, chopped)
- 2/3 block of Monterrey jack cheese, cubed
- 1 bag of fresh basil, washed and torn into bits
- 1 tbsp garlic, diced
- salt and pepper to taste
- 1/2 cup evoo
directions
Combine chopped tomatoes, garlic, salt and pepper and basil and drizzle with olive oil. Do not refrigerate and marinate all day. Add cheese to the mixture. Cook pasta according to the instructions on the box, drain and spoon into the mixture. Fold together and serve immediately.
