My own beef pot pie
ingredients
- 2 pounds beef stew meat
- 1 can condensed beef broth
- 1 can beef consomme
- 1/2 cup chopped onion
- 1 Tbls cornstarch
- Frozen 9 inch double pie crust
- 1 small potato cubed
- 1/4 cup flour
- 1 package frozen mixed vegetables
- Salt and pepper
- Egg white

Coat beef cubes with flour, seasoned with salt and pepper. Brown in a skillet. Add onions and 1 to 1 1/2 cup of the broth and the consomme combined. Simmer meat until very tender. Add the cubed potatoes and cook until tender. Add the cornstarch to a small amount of cool water and add to beef mixture. Stir until thick. Add the frozen vegetables. Cool filling.

Put 1 of the defrosted crusts in a pie pan, coat with egg white to keep it crisp. Add the cooled filling and top with other crust. Cut slits in the top for the steam to escape.

Bake at 375 for about 1 hour.
