Angel food cake
this is the recipe from the good housekeeping illustrated cookbook
ingredients
- 1 1/4 cup confectioners sugar
- 1 cup cake flour
- 1 1/2 cup egg whites (12-14 eggs)
- 1 1/2 tsp cream of tartar
- 1 1/2 tsp vanilla extract
- 1/4 tsp salt
- 1/4 tsp almond extract
- 1 cup sugar

Preheat the oven to 375°

Mix confectioners sugar and flour; set aside

In a separate large bowl combine egg whites, vanilla, cream of tartar, salt, almond extract. Beat at high speed; sprinkling in sugar 2 tablespoons at a time- beat until stiff peaks form. Do not scrape down the bowl during mixing

With a rubber, fold in flour mixture about 1/4 of it at a time. Until the flour disappears

Pour mixture into an ungreased bunt pan; break air bubbles with a spatula

Bake 35 minutes or until top of cake springs back when lightly touched(any cracks should look dry)

Invert cake, cool completely
