Mexican Casserole
ingredients
- 1 1/2 lbs. lean ground beef
- 1 can cream of mushroom soup
- 1 small can whole kernel corn – drained
- 1 small can of diced green chilies
- 1 can enchilada sauce
- 1/2 lb. cheddar cheese
- Flour tortillas – about 4

Brown beef and drain well, Mix together soup, chilies, corn, enchilada sauce, and ground beef.

Place 2 flour tortillas in bottom of 9 x 12 baking dish. Spread half of mixture over tortillas. Sprinkle half of grated cheese over mixture. Repeat with another layer of tortillas, meat mixture, and grated cheese. Bake at 350 degrees for about 30 minutes or until cheese is melted and mixture is bubbling.
