Whole Roasted Chicken
ingredients
- 1 Whole chicken
- ~4 Large potatoes, cut into thick slices
- Marinade:
- 3-4 Clove of garlic, minced
- 1/2 Inch piece ginger, minced
- 1/3 Cup oil
- 3 Tablespoons balsamic vinegar
- 3 Tablespoons soy sauce

- In a large Ziploc bag (or bowl) mix marinade
- 2
- Place chicken in bag and toss around until coated
- 3
- Remove chicken and replace with potatoes
- 4
- Toss to coat

- Remove potatoes and place in a 9“ x 13” pan creating a “roasting rack” on which to place the chicken

- Place chicken breast-side-down on pototoes

- Add 1 cup of water to the Ziploc bag, shake around to collect marinade, and pour into bottom of pan, NOT ON TOP OF VEGGIES AND CHICKEN!*

- Roast 1.5 hours on 350F
- 9
- Turn chicken breast-side-up and cook 30 min.**

This even works with a frozen chicken... no need to wait until it defrosts. *There should be about 1/2" of water in the pan ** During baking, water should not fall below 1/4" so add water when needed
