Peppermint Ice Cream Pie

ingredients
- 1 package (6 oz.) semi-sweet chocolate chips
- 2 tbsp butter, softened
- 2 tbsp powdered sugar
- 1 quart peppermint ice cream, softened
- Chocolate shavings for topping
directions
Line 9 inch pie pan by pressing a 12 inch square of heavy aluminum foil on bottom, sides and over rim. Sprinkle chocolate chips evenly on foil liner. Put in 250° oven for 5 minutes, absolutely no longer. Blend butter into softened chocolate. Add powdered sugar; blend again until mixture thickens slightly. Spread mixture thinly over bottom and up sides of foil liner. Refrigerate 30 minutes for chocolate shell to harden. Peel foil from shell and return shell to pie pan. Fill with softened ice cream; decorate with shaved chocolate. Store in freezer until ready to serve.
notes
Preheat oven to 250°. Allow time for pie to re-freeze.
