Overnight Waffles
ingredients
- 1/2 tsp instant yeast
- 2 cups all-purpose flour
- 1 Tbsp sugar
- 1/2 tsp salt
- 2 cups milk
- 8 Tbsp (1 stick) butter, melted and cooled
- 1/2 tsp vanilla extract (optional)
- 2 eggs
- Canola or other neutral oil for brushing on waffle iron
- 2 C thawed blueberries
- 1 C water
- 1/2 C sugar
- 1 Tbs lemon juice
- 1 tsp cornstarch

Evening Before

Combine the dry ingredients together: yeast, flour, sugar and salt

Stir in ingredients in the following order: milk, butter, vanilla
- 4
The mixture will be loose. Cover with plastic wrap and set aside overnight at room temperature

Morning

Brush the waffle iron lightly with oil and preheat it
- 7
Separate the eggs and stir the yolks into the batter. Beat the whites until they hold soft speaks. Stir them gently into the batter.

Spread a ladleful or so of batter onto the waffle iron and bake until the waffle is done, usually 3 to 5 minutes, depending upon iron.

Serve immediately or keep warm for a few minutes in a low oven.

Lemon-Poppyseed Waffles with Blueberry Sauce. The evening before mix 1Tbs lemon zest with sugar to release the oils, then add to batter along with 2 Tbs poppyseeds.
Blueberry Sauce:
mix blueberries, water, sugar, lemon juice and cornstarch over med-high heat. Cook 2-3 minutes after mixture begins to boil .
