Basic Crepes
ingredients
- 1 C all purpose flour
- pinch of salt
- 1 egg, beaten
- 1/1/2 C milk
- 10 tsp butter or oil
- superfine sugar

Sift the flour and salt into the bowl. Make a “well” in the center; add the egg and half the milk. Beat the egg and milk together.

Gradually mix in the flour. When the mixture is smooth with no lumps, beat in the rest of the milk.

Heat the pan over medium heat. Add a teaspoon of the butter and swirl it around to cover the whole surface.

Pour in enough batter to cover the base. Swirl around the pan while tilting it so you have a thin, even layer. Cook for about 30 seconds.

Lift up the edge of the pancake to see if it is brown. Loosen round the edges and flip with the spatula. Cook the other side until golden brown.

Turn out each pancake onto a warm plate. Stack ion layers with baking parchment. Cover with foil and keep warm.

Sprinkle with superfine sugar and fold into fourths.
notes
I like to suubstitute orange butter.
