Rolled Turkey Loaf

This has great flavor. Would be great for a potluck, as it makes a large loaf. David likes the leftovers in a sandwich.
ingredients
- 4 ounces pancetta, chopped
- 2 cups shredded mozzarella or mixed-Italian cheese
- 1/2 cup oil-packed dried tomatoes, drained and chopped
- 2 eggs, lightly beaten
- 1/2 cup chicken broth
- 2 cups soft bread crumbs
- 1/2 cup Romano cheese, finely shredded
- 2 gloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 1/2 pounds ground turkey
- 3 chicken sausages or 8 oz bulk Italian sausage

Preheat oven to 350°. In large skillet cook pancetta until crisp; remove from skillet with slotted spoon and drain on paper towels.

For filling, in medium bowl combine pancetta, mozzarella, and dried tomatoes; set aside. (This makes a lot of filling; so, you can reduce if you want.)

In large bowl combine eggs and chicken broth. Stir in bread crumbs, Romano cheese, garlic, Italian seasoning, and 1/2 teaspoon salt. Stir in turkey and sausage. (Work it with your hands.)

On parchment paper, pat meat mixture in a 9 x 12 inch rectangle. Evenly sprinkle filling on meat mixture. From one long end of parchment, begin rolling the meat mixture jelly-roll-style. Carefully transfer the roll, seam side down, to a 15 x 10 x 1 inch baking pan.

Bake uncovered for 1 hour or until thermometer reads 160°. Let stand 10 minutes before slicing.
