Fresh As Spring Strawberry Pie
Creamy and not too sweet Spring and Summer treat.
ingredients
- 6 cups fresh strawberries
- 1 cup whipping cream
- 1 pkg cream cheese 125g softened
- 1/2 cup sugar
- juice of a small lemon
- 1 baked 9" pie shell
- 1/4 cup current jelly
directions
Filling mixture.

Wash strawberries and let dry.

Whip cream until stiff peaks form and set aside. Take beater from cream and beat cream cheese, sugar and lemon juice until smooth.

Fold in the whipped cream. Cut the berries into the cream mixture, and put into the pie shell.
Topping.

Take the stawberrise and place on top of pie either whole or halved, cut side down.

Place current jelly in a small sauce panand heat until the consistancy of thickened gelatin.

Spread over strawberries on top of pie. Refrigerate 2 hrs.
notes
Use the freshest, sweetest local berries for outstanding resuts.
