Double Quick Mushroom Pate

Superb, very easy paté or dip - never any left overs of this one!
ingredients
- 250 gms brown/button mushrooms
- 250 gms cream cheese
- 60 gms butter, diced
- 2 Tbsp soy sauce
- 2 Tbsp sweet Sherry
- 1 large clove garlic
- 1 medium onion, finely chopped
- 1 large sprig Rosemary
- chopped parsley to garnish
directions
Place all ingredients, except cottage cheese and parsley, in a pan and bring to a slow simmer. Uncover and cook, stirring, for about two minutes or until the onion and mushrooms are soft and mixture almost dry. Remove from heat, discard rosemary sprig and allow mixture to cool. Stir in cottage cheese, turn into a pottery serving dish, cover and refrigerate, preferably overnight. The colour is a bit muddy and boring so perk up the dish with a liberal sprinkle of parsley and/or finely diced red pepper.

This recipe sounds and looks really boring, but I promise it is so delicious that there are never any left-overs!
