Banana Nut Cake with Cream Cheese Frosting

ingredients

- 3 cups flour
- 2 cups sugar
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 3 eggs
- 3/4 cup vegetable oil
- 4 large ripe bananas
- 1 cup chopped pecans
- 1 1/2 tsp vanilla
- FROSTING
- 1 package cream cheese
- 1/2 cup softened butter
- 1 lb powder sugar
- 1 tsp vanilla
- 1/2 cup chopped pecans

1. Grease 3 round cake pans and pre-heat oven to 350°

2. In a mixing bowl stir together flour, sugar, baking soda, cinnamon, and salt. Add the eggs and oil and stir until everyting is moistened. Stir in bananas, pecans, and vanilla.

3. Divide batter among pans and bake for 25 minutes. Cool cake layers completely.

4. While cake is cooling make frosting. In a bowl blend together cream cheese, powdered sugar, and butter. Beat until light and fluffy. Add Vanilla and pecans. Fill and frost cake when completely cooled!
