Sweet Potato Biscuits
ingredients
- 1 1/4 cups all-purpose flour
- 2 heaping tablespoons sugar
- 4 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup mashed cooked sweet potatoes
- 1/4 cup (1/2 stick) softened butter/margarine
- 2 to 4 tablespoons milk (depending on the moisture of the potatoes)
directions
Put dry ingredients (flour, sugar, baking powder, salt) in bowl and mix. In separate bowl, mix butter, milk, and potatoes (boiled, and then peeled and mashed). Add flour mixture to potato mixture and mix. Either flatten dough and use biscuit- cutter, or roll dough into a long cylinder and slice (like slice and bake cookies) Bake on cookie sheet for 15 minutes at 425 or until biscuits begin to brown.
