Meatloaf

This is supposed to be the original recipe from the Quaker Oatmeal Box. I like to add carrots for a splash of color & unexpected flavor.
ingredients
- Loaf:
- 1-2 carrot sticks, grated
- 1 onion, chopped
- 1 egg
- 2 lbs. hamburger, leanest
- 1 /2 c. oatmeal, plain
- 1 10 oz. can tomato soup
- Salt & pepper, to taste
- Topping:
- 1 /2 c. ketchup
- 1 T white vinegar
- 2 T. brown sugar

-Preheat oven to 375°.

-Put onion in microwave safe dish,add 1/2 c water, cover & steam about 1 minute to soften/cook onion.

-Beat egg in large bowl then add hamburger, drained onion, oatmeal, tomato soup, salt & pepper.

-Next add grated carrots to hamburger & mix well.

-Spread hamburger mixture evenly in lightly greased 8x11 glass casserole dish.

-Cook 30 minutes then remove from oven to add topping (mix all topping ingredients together & spread evenly over loaf). Return to oven & allow to cook another 20-30 minutes until cooked through.

-Overall cook time is about 1 hour at 375°.

*Note: I usually dab or drain any excess grease.
