Turkey Soup with Avgolemeno Sauce
After Thanksgiving leftovers! See recipe for the lemon sauce
In a large pot, add the turkey bones and cover with water. Bring the pot to a boil and reduce heat to medium high and continue cooking, covered for an hour. Take off the heat and remove bones. Let cool enough to remove any remaining meat from the bones. Return to the pot. Add diced onion and rice. Turn up the heat and boil for 20 minutes or until the rice is done.
Add the avgolemeno sauce, and serve with salad and rolls.
