Saucy Baked Chicken and Mushrooms
ingredients
- 3lbs chicken pieces, skin removed
- 1 tbsp olive oil
- 8 oz (3 cups) fresh baby portobello or button mushrooms, halved
- 1 large onion, cut into wedges
- 14 1/2 oz contadina recipe ready diced tomatoes
- 16 oz contadina italian paste with italian seasonings
- 1 tsp dried leaf sage, crushed
directions
Season chicked with salt and pepper, if desired. Brown chicken on all sides in hot oil in a very large skillet about 10 minutes. Transfer chicken to 3 qt baking dish, reserving drippings in skillet. Add mushrooms and onions to drippings. Cook over medium heat, stirring occasionally, 5 minutes; drain fat. Stir in undrained tomatoes, tomato paste, sage, and 1/2 cup water. Spoon over chicken. Bake, uncovered, at 375, 40 to 45 minutes or until chicken is done.
