Pumpkin Cake Roll

ingredients

  • 6 eggs
  • 2 cups sugar
  • 1 1/2 cups pumpkin
  • 2 tsp lemon juice
  • 1 1/2 cup flour
  • 2 tsp baking powder
  • 4 tsp cinnamon
  • 2 tsp ginger
  • 1 tsp nutmeg
  • 1 tsp salt
  • Filling
  • 2 cup nuts
  • 12oz cream cheese
  • 2 cups powdered sugar
  • 8 tblps butter
  • 1 tsp vanilla

    Beat eggs on high speed with mixer for 5 minutes. Gradually beat in sugar, stir in Pumpkin and lemon juice. Stir together flour, baking powder, cinnamon, ginger, nutmeg and salt. Fold into pumpkin. Spread onto greased 15x10x1 inch pan. Top with chopped walnuts. Bake at 375 for 15 minutes. Turn out on a towel with powdered sugar sprinkled on it. Starting with the narrow end, roll towel and cake together- cool- unroll

    For filling, combine powdered sugar, cream cheese, butter and vanilla, beat until smooth

    Spread over cake, roll and chill.
