World Famous Bradford Woods Pumpkin Cake

ingredients

  • Cake:
  • 2 cups flour
  • 2 cups sugar
  • 1 tsp cinnamon
  • 1/2 tsp pumpkin pie spice
  • 1 tsp salt
  • 2 tsps baking soda
  • 1 1/2 cups veg oil
  • 4 eggs
  • 1 1/2 cups pumpkin
  • 1 tsp vanilla
  • Icing:
  • 1 - 8oz package cream cheese
  • 6 tblsp butter
  • 1/2 tsp vanilla
  • 3/4 box of confectioners sugar
  • 1/2 cup of diced pecans

    Cake:

    Sift together dry ingredients. Add oil, eggs, pumpkin and vanilla. Beat for 2 minutes. Pour into 2 greased and floured layer cake pans. Bake at 350 for 1 hour.

    Icing:

  • 4

    Soften Butter. Cream with cream cheese and add other ingredients. Set cake in refrigerator after icing to set icing. Stays fresh and moist up to a week.
