Gaufettes
ingredients
- 1 (8-ounce) can almond paste
- 1 cup (2 sticks) butter
- 1 cup of sugar
- 3 cups flour
- 3 large eggs
- 2 teaspoons vanilla extract
- vegetable shortening

In a large mixing bowl, use an electric mixer to cream almond paste, butter and sugar until smooth. Add flour, eggs and vanilla. Mix well. Regirgerate overnith.

Roll dough into 3/4 inch balls. Place balls back into a refrigerator to chill.

Heat the cookie iron for 1 hour and then lightly brush the surface with shortening Place 2 balls in iron. Close for 30 seconds. Cookies are done when they are golden brown in color. Remove from iron and let cool. Repeat with remaining dough balls.
