Seafood Pasta
ingredients
- 2 Tbsp olive oil
- 3/4 cup chopped onion
- 1/4 cup chopped green pepper
- 1/4 cup chopped red pepper
- 2 cloves minced garlic
- 2 large ripe tomatoes, chopped
- 1/4 cup chopped fresh parsley
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 pound shrimp or crab
- 16 oz. angel hair pasta
- freshly grated Parmesan

Heat oil in large saucepan. Add onion, peppers and garlic and sauté until glossy.

Add the tomatoes, seasonings and seafood and cook over medium heat for 5 minutes.

While seafood mixture is simmering, cook the pasta according to directions on the package. Drain the pasta and transfer to a large platter.

Ladle the seafood sauce over top of the pasta.

Sprinkle with Parmesan cheese.
