Speedy Chicken Saltimbocca

ingredients

  • 1/3 cup flour
  • 1/8 tsp salt and pepper
  • 4 boneless skinless chicken breast (about 5 oz each)
  • 1 tbsp olive oil
  • 1 tsp dried or freshly chopped sage
  • 4 slices prosciutto
  • 1/2 cup chicken broth
  • 1 tbsp lemon juice
  • 2 tsp butter

    1. Mix flour, salt and pepper in a plastic food bag. Add chicken and shake to coat. Remove chicken from the bag shaking off excess flour.

    2. Heat oil in a large non stick skillet over medium high heat. Add chicken, cover and cook, turning once, about 10 minutes or until golden and cooked through. Remove to plates, sprinkle with sage, and cover with a slice of prosciutto.

    3. Add broth and lemon juice to the pan. Bring to a boil and cook until the mix is reduced by half. Stir in butter until melted and drizzle sauce over the chicken.

notes

* some good side dishes for this recipe are sautéed or steamed broccoli rabe, grilled polenta, or cannellini beans with roasted red peppers.
