Salmon Baked in Foil
This was one of the first fish dishes Matt ever liked. What a relief...nutritious, delicious and easy!
ingredients
- 4 (5 oz) salmon fillets
- 2 t, plus 2 T olive oil
- salt & fresh ground pepper
- 3 tomatoes, chopped
- 2 shallots, diced
- 2 T fresh lemon juice
- 1 t dried oregano
- 1 t dried thyme

Preheat the oven to 400°.

Sprinkle each salmon fillet with 2 teaspoons oil and salt & pepper. In a small bowl, mix together the 2T olive oil, lemon juice, tomatoes, shallots, spices and more salt & pepper (to taste). Place one salmon piece, oiled side down, on a sheet of foil. Create an open pocket and spoon tomato mix over fillet. Seal packet by folding over the top and sides to seal in juices. Repeat with the remaining 3 fillets. Place all 4 packets onto a rimmed baking sheet and bake until just cooked through, about 20 minutes.
notes
I love serving this dish with flavored couscous and fresh steamed green beans or roasted asparagus. Use dried herbs instead of fresh.
