Red Cooked Chicken
ingredients
- Sauce*
- 4 fl ounces tamari soy sauce (wheat-free)
- 4 fl ounces dry sherry
- 1 ounce sugar
- 3 gingerroot, smashed
- 4 scallions, smashed
- 1 cinnamon stick, lightly crushed
- 1 zest of orange
- 1 teaspoon five spice powder
- 14 ounces water
- Chicken*
- 2 chicken legs, whole
- 1 fl ounce canola oil
- 1/2 ounce toasted sesame oil
- salad greens

1. Place sauce ingredients into a sauce pan and bring to a boil. Lower heat to simmer and cook covered for 15 minutes.

2. Heat wok and when hot add oil. Sear chicken legs until golden. Add sauce and turn down heat to a low simmer. Cover and cook until meat is tender. Turn off heat and allow chicken to cool in liquid. Serve over greens.
