FRESH SPINACH-BASIL SALAD
“Linda’s most requested recipe!”
ingredients
- 6 c. fresh spinach leaves
- 3 c. fresh basil leaves
- 1/2 c. olive oil
- 3 cloves garlic, finely chopped
- 1/2 c. pine nuts
- 4-6 oz. proscuitto, chopped
- Pepper to taste
- 3/4 c. fresh parmesan cheese, grated

1. Toss spinach and basil in large salad bowl.

2. Heat oil in skillet over medium head. Add garlic and pine nuts and saute. Stir in proscuitto and cook 1 minute more.

3. Toss spinach and basil w/ warm dressing and sprinkle salad with parmesan. Serve immediately. Serves 6, as a side salad.

This dressing recipe can be cooked hours before, refrigerated, and then warmed in the microwave before tossing with salad ingredients; love that about this recipe!
