Pumpkin-Oat Muffins
ingredients
- 1 1/2 c flour
- 1/2 c old-fashioned oats
- 1/2 c shopped walnuts (optional)
- 2 tsp pumpkin pie spice (or 1 tsp cinnamon, 1/2 tsp ginger, 1/2 tsp allspice, and 1/4 tsp nutmeg)
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 c canned pumpkin
- 1/2 c honey
- 1/3 c apple juice
- 2 eggs
- 1/4 c oil
- 1 c chocolate chips (optional)
- 2 T old-fashioned oats

Preheat to 375. Grease or paper-line 12 muffin cups.

Combine flour, 1/2 c oats, nuts, pumpkin pie spice, baking power, baking soda and salt in large bowl. Beat pumpkikn, honey, apple juice, eggs and oil in medium bowl. Add to flour mixture; stir in chocolate chips just until blended. Spoon into prepared muffin cups, filling 3/4 full. Sprinkle tops with remaining 2 T oats.

Bake for 15-20 min. or until wooden pick inserted in center comes out clean. Serve warm. Or freeze for up to 3 months, and reheat for 10 sec. in microwave.
