Champion Chicken Parmesan
ingredients
- 1/4 cup flour
- 1/4 cup grate Parmesan cheese
- 1/4 teaspoon black pepper
- 4 4oz. skinless chicken breast cut in half
- 1 large egg white, lightly beaten
- 1 tablespoon olive oil
- 1 cup shredded part skim Mozzarella
- 3 cups hot cooked Linguine

Preheat oven to 350 degrees

Combine flour, Parmesan, and 1/4 teaspoon pepper in a shallow dish. Place each breast half between 2 sheets of heavy duty plastic wrap and flatten to 1/4 inch thickness. Dip each breast in egg whites; dredge in flour mixture. Heat 1 tablespoon oil in large skillet over medium high heat. Add chicken Cook 5 minutes on each side or until golden. Sprinkle with mozzarella. Bake in 350 degree oven for 15 minutes.
