Mushroom Pate is easy to make and keeps for five days, well sealed, in the refrigerator.

ingredients

  • 2 T butter
  • 1 cup of almonds
  • 1 T olive oil
  • 1/2 cup shopped onions
  • 3/4 lbs fresh mushrooms
  • 1 clove garlic minced
  • 1/4 tsp dried thyme
  • salt (prefer sea salt) to taste
  • freshly ground pepper to taste
  • 2 tablespoons dry vermouth
  • 1 tsp grated lemon rind (optional)
  • fresh parsley, chopped, for garnish (optional)
