Cioppino Fisherman's Wharf Boulabaise
ingredients
- 1/2 cup olive oil
- 2 cloves minced garlic
- 1 1/4 cup chopped onion
- 3/4 cup chopped green pepper
- 1 11 1/2-oz jar whole clams
- 1 2 1/2 lb can tomatoes
- 1 6-oz can tomato paste
- 1/3 cup chopped parsley
- 1 3/4 cup burgundy
- 1/2 cup chopped parsley
- 2 tsp oregano
- 1/2 tsp basil
- 2 tsp salt
- 1/4 tsp pepper
- 3/4 cup water
- 1 1/2 lbs flounder or halibut
- 1/2 lb cleaned raw shrimp
- 3 6 1/2-oz cans king crabmeat or 2 frozen 10-oz pkgs defrosted

Put oil in 6 qt kettle. Add garlic, onion & green pepper. Sauteé 10 minutes. Stir.

Drain clams. Reserve 1/4 cup juice. Add to pot. Add undrained tomatoes, tomato paste, burgundy, parsley, oregano, basil, salt & pepper, and water to pot. Mix well. Bring to boil; then reduce heat and simmer, uncovered 10 minutes.

Cut halibut into 1" pieces. Discard skin & bones. Remove cartilage from crab meat. Add fish, clams, crabmeat & shrimp to pot. Simmer covered 15 minutes, then uncovered 15 minutes longer.

Serve hot. Can be frozen.
