SEAFOOD STUFFED BELL PEPPERS / SEAFOOD STUFFED PISTOLETTES
If you are looking for a great dish for a Friday in Lent try these. Don’t get discouraged by the list of ingredients. It looks a lot worse than it is.
ingredients
For Bell Peppers:- 12 medium size bell peppers
- 12 bell pepper tops
- 1/4 cup butter
- 2 onions chopped
- 3 cloves garlic
- 1 bunch of green onions chopped
- 3 lbs peeled shrimp, butterflied and coarsely chopped
- 2 ribs celery, chopped
- 1 small bunch of parsley, chopped
- 1/8 tsp thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp red pepper
- 1 can chicken broth as needed
- 10 slices fresh white breadcrumbs christened in broth
- 1 egg, beaten well
- 3 lbs white crab meat
- 1 cup Parmesan Cheese, grated
- 1/4 cup whole milk
- buttered cracker crumbs
- olive oil & bottled water
- 1/2 lb butter
- 2 cups chopped onions
- 1/2 cup chopped bell peppers
- 3/4 cup chopped celery
- 1/4 cup chopped green onions
- 3 cups evaporated milk
- 1 lb Velveeta Cheese, cubed
- 1 cup water
- 1 1/2 lbs crawfish tails
- 1 lb crab meat, white or claw
- 1 tsp salt
- 1 tsp black pepper
- 1/2 tsp granulated garlic
- 1/2 tsp cayenne
- 3 dozen pistolettes

notes
To make the buttered cracker crumbs simply place crackers in a zip loc bag and crush with a meat mallet or rolling pin. Add a few tablespoons of melted butter and jostle back and forth.
