Fried Onion Rings

ingredients

  • 4 large sweet Spanish onions
  • 1c sifted flour
  • 1t baking powder
  • 1/4t salt
  • 1 egg, well beaten
  • 1c milk
  • 1T vegetable oil

directions

Peel onions; slice 1/4-inch thick and separate into rings. Prepare batter by sifting together flour, baking powder and salt; add milk and vegetable oil to egg. Stir in sifted ingredients: beat until smooth. With a long-handled, two-tined fork, dip onion rings in batter so that each ring is completely coated. Let drain a second; drop a few rings at a time into oil or shortening heated to 375*. Brown; turn only once. Do not crowd the rings. Drain on paper towels. Sprinkle with salt and serve piping hot. May be kept hot in a moderate oven.
