ingredients

  • 1 lb. Italian Sausage or hamburger
  • 1 cup coarse chopped onion
  • 2 cloves garlic chopped
  • 5 cups beef broth (3 reg cans)
  • 1/2 cup water
  • 1/2 cup dry red wine
  • 2 cups stewed tomatoes
  • 1 cup carrots sliced
  • 1/2 tsp basil
  • 1/2 tsp oregano
  • 8 oz. tomato sauce
  • 1 1/2 cups zucchini (sliced = 2 small)
  • 12 oz (2 cups) tortellini
  • 3 TBL fresh parsley chopped
  • 1 med green pepper chopped
  • paremsean cheese

directions

  • 1

    In 5 qt pot, brown meat, remove meat, saute onion in drippings with garlic. (If extra greasy remove excess grease.)

    Add next 8 ingredients

  • 3

    Add meat

  • 4

    reduce heat & simmer uncovered for 30 minutes

  • 5

    Add next 4 ingredients & simmer another 35-40 minutes

  • 6

    Serve with parmesan cheese
