Cloud Sponge Cake
ingredients
- 1 1/3 cup cake flour, sifted 3 times
- 1/2 tsp baking powder
- 3/4 cup cream of tartar
- 1/4 tsp salt
- 3 eggs at room temperature, separated
- 1/2 cup ice water
- 1 1/2 cup sugar
- 1/2 tsp almond extract
- Frosting:
- 2 cup powdered sugar
- 1/4 cup orange juice
- 1 Tbsp grated orange rind
- 1 Tbsp orange liquer

Sift dry ingredients together. Gradually beat in water until pale and foamy. Gradually beat in sugar until completely dissolved (8-10 minutes). Beat in extract. Fold in flour mixture in 3 additions into yolk mixture. Set aside.

Beat egg whites with cream of tartar until stiff. Gently fold into batter. Turn into ungreased 10" tube pan.

Bake at 325° for 1 hour. Invert pan over neck of bottle until cool.

Mix together frosting ingredients. Pour over cake.
