Cooperstown Pancakes
ingredients
- 1 1/2 cups buttermilk pancake mix*
- 2 tablespoons butter
- 1 cup milk
- 1 egg separated
- We use Savor pancake mix, but I’m pretty sure this will work with any mix. (Maybe even Bisquik). The trick is separating the eggs.

Place pancake mix in large mixing bowl.

Melt butter in a glass measuring cup in the microwave.

Add milk to butter, stir together. Stir in egg yolk.

Add milk mixture to pancake mix and stir until combined. (Do not overstir).

Add more milk or mix if necessary to achieve preferred consistency.

In a separate bowl, beat egg white to soft peaks. Gently fold into pancake batter.

Ladle batter onto hot, buttered griddle.

Flip when bubbles begin breaking on the surface.
