ingredients

  • 1 1/2 cups buttermilk pancake mix*
  • 2 tablespoons butter
  • 1 cup milk
  • 1 egg separated
  • We use Savor pancake mix, but I’m pretty sure this will work with any mix. (Maybe even Bisquik). The trick is separating the eggs.

    Place pancake mix in large mixing bowl.

  • 2

    Melt butter in a glass measuring cup in the microwave.

  • 3

    Add milk to butter, stir together. Stir in egg yolk.

  • 4

    Add milk mixture to pancake mix and stir until combined. (Do not overstir).

  • 5

    Add more milk or mix if necessary to achieve preferred consistency.

  • 6

    In a separate bowl, beat egg white to soft peaks. Gently fold into pancake batter.

  • 7

    Ladle batter onto hot, buttered griddle.

  • 8

    Flip when bubbles begin breaking on the surface.
