Chicken Fiesta
Easy Mexican casserole for the whole family.
ingredients
- 4-6 boneless skinless chicken breasts
- Garlic salt
- Pepper
- 1 bag boil in a bag rice
- 1 (14 1/2oz.) can chicken broth
- 1 jar of salsa (mild, medium or hot - depending on your taste)
- 1 jalapeño (if you like spice)
- 1 can of green chili’s
- 1 cup of shredded cheddar cheese

Sprinkled both sides of chicken with garlic salt and pepper. Dice chicken into bite sized pieces.

Spread rice in 13 x 9 x 2 inch baking dish; arrange chicken on top.

In a separate bowl mix chicken broth, salsa, and diced jalapeño (if desired). Then pour the mixture over chicken.

Bake covered @ 350 for 55 to 60 minutes. (If using precooked chicken, bake 30 minutes)

Uncover, sprinkle cheeses on top and bake for 5 minutes longer or until cheese is melted and bubbly.
