Passover Carrot Cake

ingredients

  • 8 eggs (separated)
  • 1 1/2 cup sugar
  • 1 1/2 cup grated carrots (lightly packed)
  • 1/2 cup ground almonds
  • 1/2 cup orange juice
  • 1/2 lemon juice w/ rind
  • 1/2 tsp salt
  • 1/2 cup cake meal
  • 1/2 cup potato starch

  • 1

    Beat egg yolks with sugar until light; add carrots, almonds, juice, rind & cake meal. Fold in beaten egg whites.

  • 2

    Bake 1 hour at 325° in tube pan.
