Passover Carrot Cake
ingredients
- 8 eggs (separated)
- 1 1/2 cup sugar
- 1 1/2 cup grated carrots (lightly packed)
- 1/2 cup ground almonds
- 1/2 cup orange juice
- 1/2 lemon juice w/ rind
- 1/2 tsp salt
- 1/2 cup cake meal
- 1/2 cup potato starch

Beat egg yolks with sugar until light; add carrots, almonds, juice, rind & cake meal. Fold in beaten egg whites.

Bake 1 hour at 325° in tube pan.
