Madagascar chicken/coconut stew

ingredients

  • 1 boneless chicken breast, cut into bite size pieces.
  • 2/3 c canned coconut milk
  • 1 yellow onion, chopped
  • 1 red pepper, sliced & chopped.OR tomato.
  • 2 cloves garalic, minced.
  • 2 tsp ground ginger
  • 1 tsp grated lemon rind.
  • 1/3 tsp cayenne powder.
  • s, p, lemon juice to taste.
  • oil (preferably coconut)

directions

    Marinate chicken in lemon juice for 30 minutes. Drain, season with s & p to taste. Saute over medium heat until cooked on outside by slightly pink inside.

    Drain oil & place chicken in a container & set aside.

    Saute onions, stirring constantly until slightly browned.

  • 4

    Add bell peppers & garlic and saute 3-4 minutes. stirring constantly.

    Reduce heat to simmer, add coconut milk, ginger, cayenne powder and lemon rind.

    Add chicken back in to stew.

  • 7

    Cover & simmer 30 minutes or until in thick stew consistency.

  • 8

    If mixture is too thin, simmer with lid removed until desired consistency.

  • 9

    Serve over rice.
