Stuffed Pepper Soup
ingredients
- 1 1/2 lbs of ground beef
- 3 large green peppers, chopped
- 1 large onion, chopped
- 2 cans of beef broth
- 2 cans condensed tomato soup, undiluted
- 1 can (28 oz) crushed tomatoes undrained
- 1 can of mushrooms (or 1 cup of fresh)
- 1 1/2 cups of cooked rice (spanish)
directions
Cook the beef, green peppers, and onion over medium heat until meat is done. Stir in the broth, soup, tomatoes and mushrooms. Bring to a boil. Reduce heat and simmer for at least 30 mins. Add rice and heat through.
