Stuffed Pepper Soup

ingredients

  • 1 1/2 lbs of ground beef
  • 3 large green peppers, chopped
  • 1 large onion, chopped
  • 2 cans of beef broth
  • 2 cans condensed tomato soup, undiluted
  • 1 can (28 oz) crushed tomatoes undrained
  • 1 can of mushrooms (or 1 cup of fresh)
  • 1 1/2 cups of cooked rice (spanish)

directions

Cook the beef, green peppers, and onion over medium heat until meat is done. Stir in the broth, soup, tomatoes and mushrooms. Bring to a boil. Reduce heat and simmer for at least 30 mins. Add rice and heat through.
