Cheeseburger Soup
My sister got this recipe from a family friend when she was 15 or so (which would put you and I around 12 or 13) and my family fell in love with it. Since there’s a lot of prep time required, I always ended up helping my sister with all of the chopping and cutting and measuring. The best part was after the tears streaming down our face from the onions and the starch on our hands from the potatoes, we could sit down to a hot bowl of this soup and enjoy our hard work. It never lasted too long, though!
ingredients
- 1/2 pound ground beef
- 3/4 cup chopped onion
- 3/4 cup shredded carrots
- 3/4 cup diced celery
- 1 teaspoon dried basil
- 1 teaspoon dried parsley flakes
- 4 tablespoons butter, divided
- 3 cups chicken broth
- 4 cups diced peeled potatoes (1-3/4 pounds)
- 1/4 cup all-purpose flour
- 2 cups (8 ounces) process cheese (Velveeta)
- 1and 1/2 cups milk
- 3/4 teaspoon salt
- 1/4 to 1/2 teaspoon pepper
- 1/4 cup sour cream
