Golden Chicken

ingredients

  • 3 1/2LB- 4LB of chicken pieces
  • 3TBSP olive oil
  • 2 1/2tsp kosher salt
  • 3/4tsp pepper
  • 1 1/2LB red or new potatoes, cut into 1 1/2 inch pieces
  • 3 sprigs fresh rosemary

directions

Heat oven to 400 degrees. Rinse the chicken and par it day with paper towels. Place in a roasting pan. Drizzle with 1TBSP of the oil and season with 1 1/2tsp of the salt and 1/2tsp of the pepper. Rub to coat. In a large bowl combine the potatoes, rosemary and the remaining oil, salt and pepper. Scatter the potatoes around the chicken into a single layer. Roast until the chicken reaches a temperature of 180 degrees, about 45 minutes.
