Garlic Lemon Chicken with Linguini
ingredients
- Juice and finely shredded peel of 1 lemon
- 4 garlic cloves, minced
- 1 tablespoon dried basil
- Salt & pepper to taste
- 4 skinless, boneless chicken breast halves
- 1/4 cup olive oil
- 2 cups heavy whipping cream
- 4 cups hot, cooked linguini
- Chopped fresh parsley

In a bowl combine lemon juice and peel, garlic, basil, salt, pepper, and half of the oil; add chicken breasts. Cover and marinate in refrigerator about an hour.

Remove chicken; discard marinade. Heat remaining oil in large skillet and cook chicken about 5 minutes on each side. Once cooked, remove chicken and set aside.

To the same pan add cream. Heat and whisk to scrape up browned bits form bottom of skillet. Let simmer about 5 minutes.

Cut chicken into thin slices. Return to pan. Add cooked linguini; toss to mix.

Transfer to serving plate and sprinkle with parsley to garnish.
