ingredients

  • 5 C pared and thinly sliced potatoes
  • 1 medium minced onion
  • 2 tsp salt
  • 3 TBSP butter
  • 1 2/3 C Milk
  • 1 C Water
  • 1 TBSP fresh chopped parsley

directions

  • 1

    Put potatoes and onions in a 3 qt. saucepan. Barely cover with water.

  • 2

    Add Salt. Cover and bring to a boil. Reduce heat and simmer 10 minutes until potatoes are soft. Mash potatoes in their liquid. Add butter, milk and water. Add water to desired thickness. Reheat to scalding. Remove from heat. Stir in parsley.
