Spicy Lentil Soup with Lemon
ingredients
- 3 tbsp olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 tbsp tomato paste
- 1 tsp ground cumin
- 1/4 tsp sea salt
- 1/4 tsp freshly ground black pepper
- 1 tsp chili powder
- 1/2 - 1 tsp curry powder (optional)
- 1/2 tsp red chili flakes
- 1 (32 ounce) carton of chicken broth
- 1 cup red lentils
- 1 large carrot
- 3 tomatoes
- 3 tbsp lemon juice
- 3 tbsp cilantro, chopped

Heat 3 tbsp of olive oil in a large pot over medium-high heat. Stir in the onion and garlic, and cook until the onion has turned golden brown, about 5 minutes.

Stir in the tomato paste, cumin, salt, black pepper, chili powder, and curry powder. Cook and stir for 2 minutes until the spices are fragrant.

Stir in the chicken broth, lentils, carrot, and tomatoes. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until the lentils are soft, about 30 minutes, stirring occasionally.

Puree the soup in a blender. Don’t add all at once, blend in batches.

Stir in the lemon juice, and cilantro, then season to taste with salt. Sprinkle with chili pepper flakes and serve.
