ingredients

  • 3 tbsp olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp tomato paste
  • 1 tsp ground cumin
  • 1/4 tsp sea salt
  • 1/4 tsp freshly ground black pepper
  • 1 tsp chili powder
  • 1/2 - 1 tsp curry powder (optional)
  • 1/2 tsp red chili flakes
  • 1 (32 ounce) carton of chicken broth
  • 1 cup red lentils
  • 1 large carrot
  • 3 tomatoes
  • 3 tbsp lemon juice
  • 3 tbsp cilantro, chopped

    Heat 3 tbsp of olive oil in a large pot over medium-high heat. Stir in the onion and garlic, and cook until the onion has turned golden brown, about 5 minutes.

    Stir in the tomato paste, cumin, salt, black pepper, chili powder, and curry powder. Cook and stir for 2 minutes until the spices are fragrant.

    Stir in the chicken broth, lentils, carrot, and tomatoes. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until the lentils are soft, about 30 minutes, stirring occasionally.

    Puree the soup in a blender. Don’t add all at once, blend in batches.

    Stir in the lemon juice, and cilantro, then season to taste with salt. Sprinkle with chili pepper flakes and serve.

Lentils are extremely healthy and important to a vegetarian diet. They lower cholesterol, manage blood sugar levels, and are a fat-free source of protein.
