Chicken Parmigiana
ingredients
- 1 2lb jar prepared marinara sauce
- 1 Tbsp basil
- 1 tsp sugar
- 1 1/4 tsp oregano
- 6 Tbsp parmesan cheese
- 1 clove garlic, crushed
- 4 boned chicken breasts
- 1 egg, beaten
- 1/4 tsp salt
- dash pepper
- 1/2 cup fine bread crumbs
- olive oil
- 1/2 lb mozzarella cheese, sliced thin

Simmer marinara sauce with basil, sugar, 1 tsp. oregano, 1 T. parmesan cheese and crushed garlic for 15 min.

Dip chicken in egg seasoned with salt & pepper, then dip into bread crumbs mixed with 3 T. parmesan cheese and 1/4 tsp. oregano.

Saute in olive oil until well browned.

Place in shallow baking dish. Pour seasoned sauce over chicken and top with slices of mozzarella cheese. Sprinkle with remaining parmesan cheese.

Bake in 350 degree oven for 30-40 min.

Can be prepared ahead of time--if so, add 10 min. to baking time.
