Grilled chicken with Aigre-douce sauce
a great chicken recipe for the grill or oven- more complex than a typical sweet and sour sauce
ingredients
- Chicken
- 1 tsp chopped garlic
- 1/2 tsp grated lime rind
- 2 tbsp dijon mustard
- 2 tbsp olive oil
- 2 tbsp chopped fresh coriander
- 4 boneless chicken breasts
- salt and freshly ground pepper
- Aigre-douce sauce
- 1/4 cup finely chopped shallots
- 2 cups pomegranate juice
- 2 tbsp brown sugar
- 1/2 cider vinegar

Combine garlic, lime rind, mustard, oil and coriander in a small bowl. Rub on chicken and marinade for 30 minutes. Season chicken with salt and pepper.

Combine shallots, pomegranate juice, sugar and vinegar in a pot. Bring to a boil. Reduce heat and simmer for about 8 minutes, or until slightly syrupy.

Preheat grill on high and grill chicken for 5-7 minutes per side or until juices run clear. Serve chicken with sauce.
