Tortellini and Ham
A couple of convenience items form the base of this quick meal. It’s sure to become a staple when you need a tasty last-minute supper on a weeknight.
ingredients
- 1 (19 oz.) pkg. frozen cheese tortellini
- 1 large onion, sliced
- 3 T. butter
- 1 1/4 c. cubed fully cooked ham
- 1/4 c. sundried tomatoes, packed in oil, drained
- 1 t. minced garlic
- 1 1/2 t. cornstarch
- 1/2 c. chicken broth
- 1 t. dried basil
- 1/2 t. dried parsley flakes
- 1/4 t. black pepper
- 4 T. grated Parmesan cheese, divided

Cook tortellini according to package directions. Meanwhile, in a large skillet, saute onions in butter until crisp-tender. Add ham, sundried tomatoes and garlic; saute 1 minute longer. Combine the cornstarch, broth, basil, parley and black pepper; stir into ham mixture. Bring to a boil; cook and stir for 2 minutes or until thickened.

Add 2 T. cheese. Drain tortellini; toss with ham mixture. Sprinkle with remaining cheese.
notes
Adapted recipe by removing 1 c. frozen pepper strips and replacing with onion. Added 1/4 c. sundried tomatoes.
