Chicken Bundles Italiano
ingredients
- 1/4 cup butter
- 1 teaspoon Italian seasonings
- 1 teaspoon salt
- 1/8 pepper
- 1/4 teaspoon garlic powder or 2 small garlic cloves minced
- 1 Tablespoon fresh chopped parsley
- 4 ounces Jack or Mozzarella cheese
- 3 whole chicken breasts, split and boned
- 1 egg
- 1/4 teaspoon salt
- 1 Tablespoon water
- 1 Tablespoon olive oil
- 1/8 teaspoon garlic powder or 1 small garlic clove minced
- 1 cup fine dry bread crumbs
- 1/3 cup dry white wine such as Chablis, sauterne, or vermouth
- Chopped fresh parsley fro garnish

In a small suitable utensil place butter, Italian seasonings, salt, pepper, garlic and chopped parsley. Microwave about 30 seconds, stir to blend. Cut cheese into 6 equal cubes. Set aside. Pound chicken with mallet to flatten into cutlets. (Pound chicken between sheets of plastic or wax paper to prevent tearing) Spread about 1 Tablespoon herb butter mixture on each cutlet. Place cube of cheese on each and roll up, tucking in ends when possible to make neat bundle.

In a small bowl beat together egg, salt, water, oil and garlic. Carefully dip chicken bundles in egg mixture and roll in bread crumbs, coating well. Place in suitable utensil or on a platter with smaller bundles to center of dish. Sprinkle generously with paprika and lightly with additional salt and pepper. (May be refrigerated at this point for later cooking, allow 1 to 2 minutes additional cooking time). If to be cooked at once, cover with was paper and cook on full power about 8 minutes. Rotate the dish once or twice to insure even cooking. Meanwhile mix remaining egg mixture with any additional herb butter mixture and wine. Pour around chicken and microwave an additional 4 minutes or until chicken is tender. If desired garnish with chopped parsley. Let stand 2 to 3 minutes before serving.
