Easy to assemble, delicious to share with friends at brunch.

ingredients

  • 4 C. Cold Chicken (diced)
  • 2 T. Lemon Juice
  • 3/4 C. Mayo
  • 1 t. Salt
  • 2 C. Chopped Celery
  • 4 Eggs (sliced)
  • 3/4 C. Cream Chicken Soup (canned)
  • 2 T. Diced Pimentos (small jar)

    Mix together -- top with:

    1 C. Grated Sharp Cheddar Cheese

    1-1/2 C. Crushed Potato Chips

  • 4

    2/3 C. Chopped Almonds.

  • 5

    Let stand overnight in 9x13 glass Pyrex dish. Bake at 400 degrees for 20-25 minutes.
