Hot Chicken Salad
Easy to assemble, delicious to share with friends at brunch.
ingredients
- 4 C. Cold Chicken (diced)
- 2 T. Lemon Juice
- 3/4 C. Mayo
- 1 t. Salt
- 2 C. Chopped Celery
- 4 Eggs (sliced)
- 3/4 C. Cream Chicken Soup (canned)
- 2 T. Diced Pimentos (small jar)

Mix together -- top with:

1 C. Grated Sharp Cheddar Cheese
- 3
1-1/2 C. Crushed Potato Chips
- 4
2/3 C. Chopped Almonds.
- 5
Let stand overnight in 9x13 glass Pyrex dish. Bake at 400 degrees for 20-25 minutes.
