Savory Oven Beef Ribs

ingredients

  • 1 Cup beef broth
  • 1/2 Cup dry red wine or beef broth
  • 1 Can (15 oz) tomato sauce
  • 1/2 Tsp dried thyme leaves
  • 1/2 tsp dried marjoram leaves
  • 3 Tbs All purpose flour
  • 1 Tsp salt
  • 1/4 tsp pepper
  • 2 Lbs beef boneless country-style ribs
  • 2 Tbs olive or vegetable oil
  • 6 Medium carrots, cut into 2 inch pieces
  • 2 Medium stalks celery, chopped (1 cup)
  • 1 Large onion, chopped (1 cup)
  • 2 Large cloves garlic, finely chopped

    1. Heat oven to 350 degrees. Mix broth, wine, tomato sauce, thyme and marjoram in a 13 x 9 baking dish.

    2. Place flour, salt and pepper in a heavy duty plastic bag; shake to mix. Add ribs; shake to coat. Beat excess flour mixture (about 1 tbs) into tomato sauce mixture in baking dish, using wire whisk.

    3. Heat 1 Tbs of the oil in 12-inch nonstick skillet over medium- high heat. Cook ribs in oil about 5 minutes, turning once, until brown. Place ribs in baking dish; turn to coat with sauce mixture. Add remaining 1 tbs oil to skillet; increase heat to high. Cook carrots, celery, onion and garlic in oil 3 minutes, stirring frequently.

    4. Add carrot mixture to ribs and sauce. Cover tightly with foil. Bake 1 hour 30 minutes to 2 hours or until rigs are tender.

notes

Bone-in ribs can be substituted. If using bone-in ribs, a larger baking dish may be needed.
