Chicken Tortilla Soup

ingredients
- 1 1/2 lbs. boneless skinless chicken (with 1 tsp. salt), cubed
- 1/2 cup chopped onions
- 1-2 minced garlic cloves
- 3 Tbsp. butter
- 2 chicken bouillon cubes
- 1 cup hot water
- 1/2-1 tsp. cumin
- 2 cups half and half
- 2 cups shredded Monteray jack cheese
- 1- 16 oz. can of cream style corn
- 1- 4 oz. can green chopped chilis (undrained)
- 1/4-1 tsp. hot sauce
- 1 medium chopped tomato (or 1 can diced)

Brown the chicken, onion and garlic in butter in sauté pan. Season with salt.

Put the water, cumin and bouillon cubes in large sauce pan.

Add the Half and Half, cheese, corn, chilis, hot sauce and tomato to sauce pan.

Mix sauté pan contents into sauce pan and simmer until cheese is melted.

Serve soup with sides of shredded cheese, tortilla chips, additional hot sauce, sour cream or any other ingredients you would like to top soup with. Also goes well with a basket of cornbread.
